Render Components / Passes - Possible to render separately?

Is is possible to render out different layers / passes like UV, Normals, Shadows, etc.?

I know that I can view them with the “Viewport Shading Options”, but I could not find a way to render them out. GBuffer to Image seems to be it, but it stays black (or green with Motion Vectors) and doesn’t seem to allow rendering of multiple passes at once…

Here a simple example, Motion Vectors are not calculated…
